Menu Plan for the Week 7/15 – 7/21 (Last menu plan post for a while)

OK! So I’ve decided to take a break from posting my weekly menu plan so that I can focus more on what I think of as the core of this blog: Decluttering.

Don’t worry! I will still make menu plans, I just won’t post them here (at least for a while). I am still planning to create a page of favorite recipe links, because that will help me with my menu planning and I thought some of you might like that, too. So this is the last menu plan post for a while, but I’m sure I won’t totally avoid the topic of food and recipes, either.

Because I love yummy food.

Corn Chowder and Cheese Biscuits

This Week’s Menu Plan

Sunday

  • Baked Ziti I used ground turkey, left out the  provolone, added sauteed zucchini and spinach
  • Salad – with our first tomatoes from the garden! Yum!

Monday

  •  Corn Chowder I use more bacon than the recipe states. Cook it up and crumble it up as a topping. Turkey bacon works, too. Sometimes I substitute chicken broth for part of the milk in this, too.
  • Cheese Biscuits

  • Classic Cobb Salad (I think we’ll grill the chicken and I won’t  bother with peeling the tomatoes)

Menu Plan for the Week 6/24 – 6/30

Hi Everybody! I am so happy that it’s summer and I am flying through my Summer Bucket List! We had our first pool swim of the summer on Saturday (thanks to some friends who invited us over) and it was lovely.

If you are wondering about my Time Diary Experiment, I’m planning to post the results sometime tomorrow. There are so many thoughts swirling around in my head about this. I think writing about it will actually help me organize those thoughts. Or I might ramble on and be all over the place. We’ll see!

You know what was really yummy last week? The Chicken salad. I loved how simple the recipe was to begin with. And then I made a small change that we loved. I didn’t have any parsley, so I chopped up some fresh basil from the garden instead. It was great and brought out the lemon flavor even more, it seemed. This was great for a hot summer night.

Menu Plan for the Week 6/17 – 6/23

Grilled vegetables with couscous

I must admit I was a little nervous about how the kids would do with the Grilled Vegetables and couscous for dinner last week, but they loved it! We all loved it. I kept the dressing separate because 2 out of 3 of our kids prefer things a little more plain if possible. The picture above actually shows the leftovers. I chopped up the leftover veggies, mixed them with the leftover couscous and dressing, added a bit of chopped fresh spinach and basil and it made a super yummy lunch!

  • Buffalo Chicken Wraps (I made them with chicken I cooked in the slow cooker. I also added chopped celery. I couldn’t find yogurt blue cheese dressing at my grocery store, but maybe I should try making some next time.)

Monday

  • 15-Minute Chicken Chili (Bumped from last week. I used regular canned tomatoes and had chiles as an optional topping. I couldn’t find the A1 sauce from the recipe at my store, so I mixed some regular steak sauce and hickory smoke barbeque sauce.  I also added some chili powder and cumin.)
  • corn bread

Menu Plan for the Week: 6/10 – 6/16

Enjoying the rice and beans

I’m back from taking a few weeks off from posting my menu plan. It felt good to take a break and it feels good to start posting again! I’m going to simplify my menu plan posts a bit this summer, I think. But I also have plans to make a page of all of our favorite recipes! I’ll let you know when I have that done.

This Week’s Menu Plan

Sunday

  • Macaroni and Cheese (Kraft, from the box! I just add a little shredded cheddar.) Mac n Cheese is on my list to find a great homemade recipe that’s not too fussy, but I haven’t found one that we all like yet.)

Monday

  •  Rice and Beans  - I made it sort of like this Vegetarian taco salad (Some of the changes – added an avocado, more spice, and just a few chips)

Tuesday  

  • Pulled Pork Primavera (from the freezer – I didn’t use a loin, I used a roast that was on sale)
  • Potato salad from a friend
  • red grapes

Wednesday 

  • Dinner and Hymn Sing at a friend’s house

Weekly Menu Plan: 2 weeks! 4/29 – 5/12

So the menu plan last week didn’t really happen. I did have a brainstorm list, but not really a clear plan. But I decided to go ahead and post what we had last week, even though it was only semi-sorta-almost-planned-ish. But this week there is a real plan! Two weeks of meals for you to check out!

  • A friend brought us dinner :-)

Wednesday 

  • Tortellini Soup from the freezer (I froze it without the tortellini, and I didn’t have any tortellini in the house, so I used bow tie pasta instead.)

  • We were sent home with leftover food from the potluck lunch at church (Roast chicken, rice, bread). Yay!

  • Chicken Noodle Soup (I use a Cook’s Illustrated recipe, but I’ll make the broth like this recipe)

  • Easy Chicken Enchiladas (I add enchilada sauce on top before the cheese, and sliced black olives, too. We top these with fresh tomatoes, lettuce, and sour cream.)
  • Multigrain chips and salsa

  • We will be celebrating our anniversary in some low-budget way. Mr. RSS might be the chef. :-)

Menu Plan for the Week: 4/22 – 4/28

Healthified Ham and Potato Casserole

How last week’s menu went:

Last week went really well. Of course it was huge that we were gifted with 3 out of 7 meals. That was helpful on many levels.

Favorite meal from last week:

Let’s go with the Healthified Ham and Potato Casserole. Great comfort food. I used red pepper instead of green and added some mushrooms that were crazy on sale from Aldi. Oh, and mine wasn’t quite as healthified as the recipe, mainly because I used regular cheese instead of reduced fat.

  • Quick spaghetti and meat sauce: 1 box of spaghetti + 1/2 pound of cooked ground beef + 2 jars of spaghetti sauce = happy tummies in a hurry

  • Chicken Fried Rice – I make it pretty much like this Pork Fried Rice recipe, but I add celery and increase the spices

Meal Plan for the Week: 4/15 – 4/21 and Umbrella Cookies

Skinny Tuna Noodle Casserole

How last week’s menu went:

It was a really good menu week. I made the Skinny Tuna Noodle Casserole with macaroni noodles this time, and I think we liked it even better. I really need to double the recipe next time, because it was gone, gone, gone.

Favorite meal from last week:

Of the meals we made we’re going with the Slow Cooker Pulled Pork. Yum. And I put some in the freezer for another meal. Of course I didn’t get a picture because we were so excited to eat it that we just scarfed it down.

But I did get a picture of the Umbrella Cookies that I made for “U” week in kindergarten. I use The Best Rolled Sugar Cookies recipe. It really is the best, by the way. I just used a circle cookie cutter and then cut the circle in half to get the right shape. And I used this Sugar Cookie Icing recipe with vanilla extract instead of almond. I had help from Gabe, too. He loves to help in the kitchen, especially with baking.

Menu Plan for the Week: 4/8 – 4/14 with Bunny Cake

Chicken Divan, Lightened Up

How last week’s menu went:

Last week went pretty well. I didn’t make the quiche, but I cannot seem to remember what we ate instead! I must be getting old, or I’m sleep deprived, or both. We also did not have a leftover night, and that was because our friends invited us over for a cookout. Sweet! It was a lovely time.

Oh, and I tried the Beautiful Burger Buns as hot dog buns, and it didn’t work out very well. They were very flat and not very soft. I wonder if I used too much flour. But we were able to laugh about it and enjoy the hot dogs anyway!

The Big-Batch Vegetable Soup  (I added a bay leaf and a parmesan rind while cooking) turned out great. I didn’t want to use a tablespoon of tomato paste this time, because I ended up wasting the rest of the can I used the last time. So I just used some pasta sauce instead (more than a tablespoon). I also added diced potato instead of the pasta I had planned. It was good!

Favorite meal from last week:

I couldn’t really decide, so I asked everyone else, and of those who could clearly verbalize a choice, here’s what we had:

Gabe picked the Homemade Pizza with a quick and easy crust, Ella picked the hot dogs, and Mr. RSS picked the Chicken Divan, Lightened Up (I increased the sauce amounts, used cheddar cheese, and added curry powder).

Bunny Cake

Sunday –  Easter Dinner with family! 

  • Glazed Baked Ham
  • Classic Green Bean Casserole
  • Fresh pineapple
  • Sweet Potatoes
  • Bunny Cake (I didn’t make it exactly like the one from this link, but this is the same basic cake.) Mr. RSS grew up having this cake on Easter Sunday, so it has some family history. Grandma and the kids helped decorate it.

Monday

  • I got a free Artisan pizza from Domino’s Facebook offer! My sister was coming over for dinner with her kids, so she picked up a cheese pizza also.

Menu Plan for the Week: 4/1 – 4/7

Vegetarian Stuffed Peppers

How last week’s menu went:

Last week went pretty well. I have been such a crock pot failure lately, though. I always seem to forget to get the crock pot recipes started in time! Does anyone have a great idea for this? It happened this week with the Vegetarian Stuffed Peppers. I didn’t get them started in time, so I made them more like this recipe (which I have used before) that uses the oven.  I ended up doing a recipe that was something between the two, and it was good, but one of these days I want to try again to get those peppers in the crock pot on time!

Favorite meal from last week:

I’m going with the Omelet Bar (choice of cheese, a little bit of leftover ham, spinach, sauteed onions, mushrooms) was the favorite for the week. It was sort of a surprise favorite, actually. And I’m adding it to my mental list of good recipes for using up little bits of food that need to be eaten. Omelets are cheap and easy, too!

I didn’t get a picture of the omelets, but Mr. RSS assures me that you all know what one looks like. :-)

I did get a picture of the Buffalo Chicken Salad, which was another favorite (I saved some plain chicken for the kids).

Menu Plan for the Week: 3/25 – 3/31

Steak Salad

How last week’s menu went:

Last week went very smoothly. Gotta love that.

Favorite meal from last week:

I’m going to say that our favorite meal was the Steak Salad, although I can’t take any credit for the steak part because our marvelous friends sent us home with it after a dinner party. But I did make the salad. And I did reheat the steak and slice it. I even made the dressing. So I say it counts. I added some lightly sauteed yellow peppers and loved that addition, too.

I could pick several dishes for second place, but I do want to say that the Make-Ahead Unstuffed Shells were really super easy and yummy and we all loved them.

  • homemade vanilla yogurt with blueberries (I use low fat milk and add 1 c. of nonfat powdered milk to thicken)
