Menu Plan for the Week: 6/10 – 6/16

Enjoying the rice and beans

I’m back from taking a few weeks off from posting my menu plan. It felt good to take a break and it feels good to start posting again! I’m going to simplify my menu plan posts a bit this summer, I think. But I also have plans to make a page of all of our favorite recipes! I’ll let you know when I have that done.

This Week’s Menu Plan


  • Macaroni and Cheese (Kraft, from the box! I just add a little shredded cheddar.) Mac n Cheese is on my list to find a great homemade recipe that’s not too fussy, but I haven’t found one that we all like yet.)
  • baked beans
  • raw carrots


  •  Rice and Beans  – I made it sort of like this Vegetarian taco salad (Some of the changes – added an avocado, more spice, and just a few chips)


  • Pulled Pork Primavera (from the freezer – I didn’t use a loin, I used a roast that was on sale)
  • Potato salad from a friend
  • red grapes


  • Dinner and Hymn Sing at a friend’s house



  • Homemade Pizza with a quick and easy crust (I use part whole wheat flour and knead the dough after mixing)
  • raw fruit/veggies


  • 15-Minute Chicken Chili (I’m always on the hunt for quick, easy, budget-friendly, healthy recipes, so I thought this looked like it was worth a try. I’ll use regular canned tomatoes and have chiles as an optional topping.)
  • multigrain chips or corn bread
  • fruit
