So the menu plan last week didn’t really happen. I did have a brainstorm list, but not really a clear plan. But I decided to go ahead and post what we had last week, even though it was only semi-sorta-almost-planned-ish. But this week there is a real plan! Two weeks of meals for you to check out!
Favorite meals from the last 2 weeks:
- Homemade Pizza with a quick and easy crust (I use part whole wheat flour and knead the dough after mixing)
- Vegetarian taco salad (I added avocados and more spice.)
Last Week’s Menu “Plan”
Sunday
- Nachos – cheese, refried beans, black beans, green onions, salsa (I made some Healthy Corn Tortilla Chips to use up some leftover corn tortillas, but I did add a tiny bit of oil.)
- raw veggies
Monday – My sister and her kids were here for dinner.
- Chicken leg quarters (baked with olive oil and McCormick’s Montreal Chicken Seasoning
- sweet potatoes
- Rosemary potatoes – microwave
- mixed veggies (cooked)
- salad
- olive bread (my sister brought this)
Tuesday
- A friend brought us dinner
Wednesday
- Tortellini Soup from the freezer (I froze it without the tortellini, and I didn’t have any tortellini in the house, so I used bow tie pasta instead.)
Thursday
- Skinny Tuna Noodle Casserole (I used macaroni noodles and french fried onions on top. Yes, I did.)
Friday
- Dinner out with the family for my secret shopper job
Saturday
- Vegetarian taco salad (I added avocados and more spice.
This Week’s Menu Plan!
Sunday
- We were sent home with leftover food from the potluck lunch at church (Roast chicken, rice, bread). Yay!
- Spinach salad
Monday
- Chicken Noodle Soup (I use a Cook’s Illustrated recipe, but I’ll make the broth like this recipe)
Tuesday
- Vegetable Lasagna (I may make it more like this recipe. We’ll see.)
- French Bread
Wednesday
- Easy Chicken Enchiladas (I add enchilada sauce on top before the cheese, and sliced black olives, too. We top these with fresh tomatoes, lettuce, and sour cream.)
- Multigrain chips and salsa
Thursday
- Ravioli with Sage Cream Sauce (We love this with butternut squash ravioli – this is another kid favorite around here)
- Salad
Friday

- fruit/veggies
Saturday
- We will be celebrating our anniversary in some low-budget way. Mr. RSS might be the chef.

I just found your blog through Small Notebook. What a great resource. I like the idea of meal planning for 2 weeks. I usually do one week but it makes it so we have to grocery shop every Sunday and I don’t look forward to that. I’ll give this a try!
Hi Mel! I’m glad you popped over for a visit. I love Small Notebook, too. I actually don’t usually plan for 2 weeks at a time, but I do think it’s a good idea!
I usually do my menu plan and grocery list over the weekend, planning for Sun. – Sat., but I grocery shop on Mon. or Tues. for the week. The way it works, Sunday ends up usually being an eat-from-the-pantry-and-use-up-stuff-in-the-fridge-day. That’s what is working for me these days!
