Chicken Noodle Soup

How last week’s menu went:

Last week went well! I think the only change was that I decided to make homemade pizza on Saturday night and bumped the chicken noodle soup to Sunday, which worked out quite well. I ended up using Simply Recipes’ recipe for making chicken stock from the roast chicken last week, and then decided to go back to my old standard chicken noodle soup recipe from The New Best Recipecookbook (from the editors of Cook’s Illustrated). That’s one of my very favorite cookbooks. by the way.

Favorite meal from last week:

It had to be the Easy Lasagna. I just served it with a green salad. It was so yummy I forgot to take a picture! I do use more sauce (almost double) than what the recipe calls for, which seems to be a common recipe modification in this house. We had a fabulous guest for dinner that night as well, and all 6 of us loved it.

This Week’s Menu Plan

I’m joining Jessica at Good (Cheap) Eats in a Pantry Challenge. I’m trying to use up food from the pantry this month. I think this could lead to some good pantry cleaning out and organizing, too! 


  • Chicken Noodle Soup  (From Cook’s Illustrated) In an effort to use what I had and be a frugal-anti-food-waste gal, I added some leftover cooked veggies and some frozen veggies, too
  • Blueberry muffins




  • Salmon Cakes (new recipe I’m trying in order to use up some canned salmon)
  • Spinach salad
  • rice or potatoes, I think



  • Quick spaghetti and meat sauce: 1 box of spaghetti + 1 pound of cooked ground beef (from my freezer) + 2 jars of spaghetti sauce = happy tummies in a hurry
  • salad or green beans
