Menu Plan for the Week of 7/31 – 8/6

Today’s motivation for menu planning: 

Meal planning helps me to know when I made a particular dish, so that I know how old the leftovers are. This can help me waste less food.

How things went last week:

I changed things around quite a bit, so I thought I would share what we actually ate last week:

Sunday:

Monday:

  • Grilled Rockfish with grilled veggies, brown rice Roast Chicken (I made 2)
  • broccoli
  • roasted potatoes

Tuesday:

  • London Broil Steak Salad  (I won’t follow the recipe exactly)  West Indian Rice and Beans  (At the last-minute I decided to try to make a more authentic version and mostly switched to this recipe for Jamaican Rice and Peas, but I messed up on the amt. of liquid, so the rice didn’t turn out quite right. We liked the flavors, though, so I may try it again, maybe a little more like the original recipe I was planning to do in the first place.)
  • Mango (using up a jar I had in the fridge)

Wednesday:

  • Roast Chicken, green beans, potatoes Green salad with leftover roasted chicken on top.

Thursday:

  • West Indian Rice and Beans, salad Chicken Salad Sandwiches (made with the 2nd roast chicken from Monday)
  • potato salad (from the leftover roasted potatoes)
  • fruit salad (picture above)

Friday:

Saturday:

  • Leftover night  London Broil Steak Salad (The salad was good, I just wished I had splurged on a nicer steak, the dressing needed to be doubled. We also had an extra adult with 2 small children visiting)
  • grilled peaches

Favorite meal from last week: Well, not counting the takeout pizza ;-)… I’ll pick the Roast Chicken, broccoli, and potatoes, with Fresh Tomato Basil Pasta with Feta as a close second.

This Week’s Menu Plan:

Sunday:

Monday:

  • Homemade pizza: BBQ Chicken Pizza (I use less chicken, and a mix of Gouda and Mozzarella cheeses) I’ll also make a cheese pizza. I’ve been using this crust recipe.
  • watermelon

Tuesday:

Wednesday:

  • Grilled Pork Chops (haven’t decided on the marinade, let me know if you have one you love)
  • green beans
  • corn on the cob

Thursday:

Friday:

Saturday:

  • Pesto pasta (made with basil from the garden)
  • sautéed or grilled red peppers

  1. My favorite is the steak salad! Your menus look very yummy. And I am totally impressed that you make your own stock.

    • Thanks Abigail! 🙂 I don’t always make my own stock. I usually plan to, and then it doesn’t happen, so it’s progress that I did it this time! I actually have so much that I think I might need to freeze some.

        You can condense it by simmering, to save space in your freezer. I always have a gallon or two of stock in the freezer, condensed to 4x strength.

    BTW, how’s your fridge doing?

    • He he he… It’s hanging in there pretty well, I think. I’m trying to maintain it, but I know I need to think about doing another big clean out before it slips away! I still haven’t gotten to those condiments…Thanks for asking. 🙂

    We love Patti’s seasoning on our chops. Patti’s is a restaurant in KY. We also put butter & worcestshire sauce on them while grilling. Yum! You have a great menu.

    Hmmm…. looks like another Monday evening visit might be in order! Loving the menu planning; the foodie photo’s have almost inspired me to start cooking again. I also have to say that the fam participation in decluttering is most impressive. Wish the decluttering over here looked better and not WORSE. You should see the boxes. Aye-carumba.
